
Getting Your Oven Temp Actually Right
Ever notice how most convection ovens just can’t seem to hold a steady temperature? It’s that annoying “swing.” The thermostat kicks in, the heating element glows, but by the time the air actually gets hot, the oven has already overshot the mark. Then it cools down too much. If you’re just starting out or you’re chasing that perfect, professional bake, these little jumps are a nightmare. They’re why your crusts come out uneven or your cake centers decide to collapse right when you think you’ve nailed it. We figured out a way to stop that. We started putting fast-response IR emitters right into the convection circuit.
Why IR Actually Works
Think about traditional heating coils. They’re slow. They have to heat the air, and the air has to heat the food. It’s a middleman problem. Shortwave halogen tubes are different. They use radiation. The heat hits your foodimmediately. No waiting for the air to catch up. We use quartz envelopes to keep that heat tight and focused. The best part? The second the controller cuts the power, the heat drops. Almost instantly. No more “overshooting” the temp and ruining a delicate batch of macarons.
Getting the Setup Right
You can’t just throw any emitter in there. You have to match the wattage to the size of your oven. If the tube is too powerful, you’ll end up with hot spots that burn your edges. Too weak? The oven won’t recover its temperature fast enough after you open the door to check on things. We usually stick with R7s or Sk15 connectors. They snap in securely, and when a tube eventually burns out—because they do—you can just swap it for a new one without a headache.
The Trade-offs
Look, this isn’t a magic wand. Because IR heat is so intense, it can put a lot of stress on the oven’s frame. You’ve got to make sure your insulation is solid. And a word of warning: don’t try to “over-drive” the emitters just because you have a leaky door. You’ll just burn through your lamps way faster. The trick is finding that sweet spot between your IR output and your fan speed. That’s how you get a perfectly even bake across every single rack.
