
Getting the Crust Right: Why IR Heating Matters for Your Ovens
In a professional bakery, a single degree is a big deal. It’s the difference between a perfect, golden-brown loaf and something that just looks… off. If the temperature slips, your crust color shifts and the inside of the bread doesn’t quite hit the mark. That’s why we lean on short-wave infrared heaters inside our convection systems. The fans do the heavy lifting by moving the air, but the IR lamps are the secret weapon. They provide that instant, targeted heat that keeps your oven temperature locked in. Stopping the “Temperature Rollercoaster” Most heating elements are bulky. They take forever to warm up and even longer to cool down. This creates a lag, and that lag leads to temperature swings. It’s like trying to drive a car with a sticky gas pedal. We use quartz-halogen tubes because they’re basically instant. The second your controller notices a tiny dip—even just 0.5°C—the lamp kicks in and recovers that heat before the bread even feels it. Instead of your temperature jumping up and down like a sawtooth, you get a smooth, flat line. The Hardware Side of Things These tubes are built to handle a lot of power. We use reinforced quartz so they don’t warp after being heated and cooled a thousand times. But you have to be smart about it. High-wattage tubes give you that beautiful, rapid browning, but they put a lot of stress on your contactors. And if you cram too much power into a small space? You’ll end up with hotspots that burn one side of your product while the other stays pale. It’s all about finding that sweet spot between where the lamps sit and how the air flows across the rack. Keeping Things Running Nobody wants their oven down during a morning rush. To make life easier, we use standard connectors. If a tube eventually burns out, you just pop it out and drop a new one in. Simple. A couple of warnings, though. These things get incredibly hot. If you use cheap wiring, it’ll get brittle, crack, and eventually short out. Always use heat-rated wiring. Also, keep the quartz clean. It sounds minor, but grease buildup on the glass actually absorbs the IR energy. That kills your efficiency and, worse, can cause the glass to overheat in one spot and crack. Give them a wipe, and they’ll last much longer.
